This Nouveau, made using grapes from old vines, is the expression of the Gamay grape at its purest. A very ‘winy’ cuvée, which is all grape. This is a top of the range cuvée with character that will reconcile the disappointed with Nouveau wines. The complexity of the mouthfeel makes this a true wine that can improve over the winter and be enjoyed right through the summer. Dark robe, structured and fleshy on the palate with very ripe black and red berry flavours. "To be stored in the great vintages!"
Delivery from the 3rd Thursday in November.
Vines & terroirs
8 hectares of Gamay in Saint Vérand. Guyot and Cordon de Royat pruning, old vines from 35 to 100 years old, south-western exposure on dark granite soil which gives substance to this cuvée.
Sustainable agriculture. Manual harvest at full ripeness.
Vinification: traditional for Beaujolais: half-carbonic maceration with two pump-overs per day, 5 days in concrete tanks, pneumatic pressing, no chaptalization neither yeasting, minimum of SO2.
Vinification & Aging
Aging: 1 month in old oak casks.
Cellaring: Drink within the year.
Tasting notes
Eye: Intense ruby.
Nose: Powerful and concentrated. Good tonicity of floral aromas but also blackberry then caramel and roasted chocolate.
Palate: Volume of ripe fruit with dominant aromas of blackberry and blackcurrant, associated with notes of liquorice. Opulent and well-structured on the palate, this area is rich in tannins chiseled lace. The acidity is well integrated. The wine has a hint of minerality that makes you mouth water. The finish is persistent and fresh.
Matching it with food
The pairings are multiple and infinite and we can refer to all the pairings of our red Beaujolais, particularly the rabbit terrines, duck, wildfowl, young roast rabbit, a pigeon with peas, small Provencal stuffing, red fruit tarts etc.
