Devatting, a key stage in winemaking
After several days of fermentation in our concrete vats, it is time for devatting:
The wine flows out naturally: this is the free-run juice, which is fine and elegant.
The grapes are then removed from the vat and placed in the press.
This produces the press juice, which is richer and more structured.
We blend the two juices to obtain the final cuvée.
